Stuffed Roast Duck

Ingredients

1 large duck minimum weight 1.6kg
2 large onions peeled and thickly sliced
Salt and pepper to season

For the stuffing:

 2 tbsp olive oil
2 shallots finely chopped
2 cloves garlic crushed
1 tsp grated ginger
1 celery stalk, finely chopped
100g chopped pitted prunes
1 apple grates
80g dried cherries
80g toasted, finely chopped hazelnuts
3 sprigs thyme
Zest and juice of 1 orange
1 egg yolk
Salt and pepper to season

For the glaze:
½ cup orange marmalade
½ tsp ground cinnamon
½ tsp chilli flakes
Juice of ½ an orange
